Slimming World speed fried rice


I came up with this recipe to use up veggies lurking in my fridge along with some leftover brown rice.

It’s nutritious, tasty and packed with 9 speed foods that help with weight loss.

Speed fried rice

serves 1


1/2 an onion, sliced

30g diced carrots and swede, cooked (I had some leftover from a packet that you microwave)

1/2 courgette, diced

1/2 stick celery, sliced

1/4 red pepper, diced

4 mushrooms, sliced

A small wodge of red cabbage, sliced

1 spring onion, sliced

1 cooked chicken breast, diced

1 chicken oxo cube

150g cooked brown rice

2 tablespoons soy sauce

1 tablespoon tomato paste

A cup of hot water

Using Frylight, spray a non-stick frying pan and fry the onion, courgette, celery, pepper, mushroom slices, red cabbage and chicken.  Add the carrot, swede, soy sauce, tomato paste, oxo cube, water and rice. Fry as you would a kind of risotto, until the rice soaks up the liquid.

Serve hot with spring onions scattered over the top.

This was so tasty and I’m definitely making this again. Probably the day before asda delivery arrives 😉
