Roasted vegetable and bacon salad with feta cheese
2 onions, chopped into wedges
1 small butternut squash, peeled and chopped into small chunks
Bell pepper or choice, deseeded and chopped into pieces
6 rashers of smoked bacon, diced
Young spinach leaves, washed
Feta cheese, crumbled
Salt and pepper to taste
Place all ingredients except spinach and feta into an oven roasting dish and toss to coat with oil. Bake at 200 degrees celcius until the butternut pieces are tender. On a plate, place the spinach leaves and top with roasted veggies. Top with feta cheese.
